Plantbased meatballs gnocchi by Luna Trapani

Serves approx. 4 people. Ingredients - Olive oil for frying - 400 gr of beyond meat mince, I like to season the mince with minced garlic, basil, onion, ketchup and mustard before rolling them into balls. - 2 cloves of garlic, minced - a handful of fresh basil + extra to serve - 400 ml of tomato sauce - 200 ml of water - 400-500 of gnocchi, see my gnocchi highlights for my fav brands! - vegan parmesan to serve, my favorite brand is gondino - How to make 1. Roll the mince into mini meatballs. 2. Heat up the olive in a large pot or pan. 3. Brown the meatballs for a few minutes. 4. Add the garlic and basil. Leave to fry for another few minutes so everything can release their flavor. 5. Then add the tomato sauce and water. 6. Bring to a boil and leave to simmer for 5 minutes. 7. Add the gnocchi and simmer for another 5 minutes until the gnocchi are tender. 8. You may need to add a little water if the sauce gets too thick by the starch of the gnocchi. 9. Serve straight away with some grated parmesan and fresh basil. 10. Buon appetito!
